08 Breads - Muffins
2 Eggs
1 Cup Brown sugar
1 Cup Oil
½ Cup Dates chopped
½ Cup Pecan nuts chopped
½ Cup Coconut
1 ½ Cup Apple grated
1 ½ Cup Carrot grated
2 Cup Cake flour
1 Teaspoon Baking powder
1 Teaspoon Bicarbonate of soda
2 Teaspoon Cinnamon powder
3 Tablespoon Yoghurt or buttermilk
Beat eggs and sugar until fluffy.
Add oil and beat well.
Add remaining ingredients and blend well.
Pour into muffin pans and bake on 180° for 30 minutes.
Or bake on 220°C for 5 minutes then reduce the heat to 180°C for a further 15 minutes.
