06 Main Veg - Sushi Rice
2 Cup Rice
2 ½ Cup Water
5 ½ Tablespoon Rice Vinegar
1 ½ Tablespoon Sugar
1 Teaspoon Salt
Boil rice with the water until softened but firm without hard kernels.
Be careful not to overcook.
Transfer the rice to a large plastic bowl and do not cover.
Heat the vinegar with sugar and salt until the sugar dissolves.
Pour over the rice and mix with a wooden spoon in a cutting motion and allow to cool.
NB: The rice mixture will become quite sticky.
